History

In 1982, one of the most prolific agave producing companies in the Jalisco Highlands and the country was organized under the name of Don Nacho, beginning production at 5,000 tons a year until reaching the current figure of 50,000 tons a year. This laid the foundation for starting a tequila factory.

Casa Don Nacho began in 2003 under the trade name of Tequila Don Nacho, S.A. de C.V. with the goal of creating an excellent quality product. Ignacio Hernandez Gutierrez is the founder and head of the company. After growing agave for three decades, he and his family had the vision to commence a new phase of the tequila business by supplying their factory from their own agave fields that have the highest yields and quality in the Jalisco Highlands.

Harvest

Once the agave is ripe, it is harvested by removing the leaves and leaving only the base and stem, resulting in the agave heart resembling a pineapple. This is where the agave’s carbohydrates are stored.

Cooking

The agave heart is split open if too large and cooked in traditional ovens or steam-cooked in autoclaves under 0.5kg/cm2 of pressure, turning the carbohydrates into fermentable sugar.

Milling

The complete or split agave heart is shredded mechanically and fed into a milling tandem. Almost all soluble sugar is extracted by adding water, resulting in what is known as diluted agave juice with a saccharimeter reading of 11.5 bx at 20ºC.

Formulation

A portion of yeast (saccharomyces cereviceae) is added to the juice extracted during milling to achieve musts appropriate for fermentation and 100% agave tequila.

During this step of the process, sugar present in the must is transformed by yeast action into the ethylic and congeneric alcohol that is characteristic of the drink. The critical factors in this step are temperature, pH and contamination by microorganisms found in yeast.

Distillation

Once the fermentation process has concluded, the must known as dead must will have an average of 4.5%-6.5% alcohol volume at 20ºC, and is submitted to double distillation. Distillation may be continuous or discontinuous. It consists of separating and purifying the alcohol and removing undesirable components such as yeast remains, nutritional salt and solids, and reducing some secondary alcohol (methanol) and a group of composites known as superior alcohol, and lastly water.

Dead must is passed through a destroyer still that uses steam for heat. “Heads” and “tailings” are separated, and the middle of the distillate, called “Regular” (24% alcohol volume at 20ºC), is used.

The regular alcohol distilled in the still also uses steam for heat. The “heads” and “tailings” are separated, and the rest of the distillation is concentrated to 55% alcohol volume at 20ºC

AGING

Once obtained the 100% pure Agave Pure White Tequila is left to stand in American white oak barrels for 6 months for our 100% Pure Agave donut and 10 months for our tequila 100% pure Agave Pure Rest.
